Their story
Guarding a lineage
Since 1989 Eduardo Donato has worked at Dehesa Maladúa to preserve Manchado de Jabugo and produce 100% Iberian acorn-fed organic ham in a UNESCO-protected dehesa ecosystem.
Dehesa and montanera
Pigs range freely on acorns, grass and wild fruit. Stocking rates are low and the pace is slow: each ham can take years from rearing to cure.
Recognition
Food media have ranked these hams among the world’s most exclusive — thanks to genetic rarity and organic management.
