Guardians of the land
For more than 25 years Despelta has worked Sigüenza’s cereal landscape with a demanding idea: care for soil, biodiversity and forgotten varieties in one of Spain’s most depopulated areas.
From field to mill
They grow spelt and other ancient wheats organically; the harvest is transformed on the estate with slow stone milling. Each bag reflects that year’s crop.
Awards and community
They have been recognised by Ecovalia, Slow Food, business excellence awards and BBVA Sustainable Producers. The Guardians of Origin model brings seasonal harvests to bakers and households.
