In Pallarés, deep in Extremadura’s dehesa, the Sousa family makes artisan foie gras. Eduardo Sousa has taken this ethical model — no force-feeding, respecting migratory cycles — to kitchens worldwide.
Freedom and dehesa
Geese live free on the family’s own farm (around 40 ha) and associated dehesa pastures. Production is limited and seasonal — only in winter, when birds naturally store fat.
