Eduardo Donato bought the dehesas in 1989 and has devoted his life to preserving the Manchado de Jabugo pig.
Comment ils produisent et vendent
The pigs grow slowly and roam free in the dehesa, eating acorns, grass and wild fruit, for up to three acorn seasons. The hams cure naturally in Cumbres Mayores for up to six years. Sold through their online shop.
